Chicken Taco Soup
Do you want a super easy, great tasting Chicken Taco Soup recipe? This recipe is for you! Your family will enjoy the robust favors in this soup. And what’s better than that….It only takes minutes to make!
- 2 ½ lbs – 3 lbs of chicken breast
- 1 bag of frozen corn
- 2 15 oz cans of black beans
- 2 15 oz cans of Rotell diced tomatoes
- Approximately 6 cups of water
- 2-3 Tbsp of Better Than Bouillon Chicken Base
- 2 tsp of Chili Season
- 1 tsp of cumin
Homemade Tortilla Chip Slices
- Approximately 10 Corn Tortillas
- 2 Tbsp of oil
If you have an Instant Pot, add all your ingredients except your beans into the Instant Pot. Rinse your beans with water and then add to Instant Pot. Select the Manual setting and increase the time to 40 minutes. Make sure you have it pressurized.
If you do not have an Instant Pot, you can put all your ingredients (including rinsed beans) into a pot and boil until done.
To fry up the Tortillas, add the oil to a pan and preheat. Cut the corn tortillas into strips and then cut in half. Fry until done. Add in the tortillas into your soup and enjoy!
