
Family Time: Dinner And A Movie
Family time can exciting with dinner and a movie. Family Time is so important. One of our favorite ways to spend family time is with dinner and a movie. We usually cook dinner (sometimes the kids cook) and we bring our dinner into the living room and put on a movie.
Kids grow up so fast and before you know it your teens are cooking waffles and bacon. Or even carving their own pumpkins. Additionally as parents, we need to love on our children and make as many memories as we can because before we know it they will be all grown up. It is a sad reality. God blessed us all with amazing kids and I know in the face of electronics, we as parents usually lose the quality time battle.
A Blessing?
BUT…God has given a gift with this horrible CO-VID 19 virus. I know it is hard to see the blessing, but He has given us the blessing of spending time with our family. I know it is hard to see our blessings when faced with uncertainty and tragedy, but we must keep positive. We need an emotional break from life!
Dinner And A movie
I have done all the work for you. Below is a choice of 2 meals and a list of movies to pick from. So, grab that family up and start planning! (PS these meals can be altered to be allergen-free)
Meal 1
Chicken Fettuccine Alfredo
- 1 ½ – 2 lbs of chicken
- 1/2 cup of butter
- 1 cup of cream cheese
- 3 cups of milk
- 1 – 2 Tbsp of flour if needed to thicken (can use brown rice flour)
- 1 Tbsp of diced garlic
- ½ tsp of black pepper
- dash of salt (add more as desired)
- parmesan cheese
- 2 red peppers
- Broccoli
In a skillet, cook the chicken until fully cooked. In another pot melt butter and add garlic. Cook garlic until starting to brown. Add milk, cream cheese, salt, and pepper to your pot. Heat and stir everything together. If the Alfredo Sauce needs to be thickened, you can add 1 TBSP at a time. Whisk until your desired thickness. In a bigger pot boil Fettuccine Noodles. You will have to steam your red pepper and broccoli to make them softer. I use my metal strainer and put it over my noodles as they boil and it will steam your veggies in addition.
Once your chicken is fully cooked and your sauce is ready, now you can plate your food. Add your noodles, chicken, sauce, veggies, and desired parmesan cheese. Now you are ready to serve!
Meal 2
Homemade Pizza
- 3 ½ -4 cups of flour
- 1 envelope of dry yeast
- 1 ½ tsp salt
- 2 Tbsp of olive oil
- 1 tsp sugar
- 1 ½ cups of water (with a temp 110-120 F)
- 4 cups of cheese
- 1 can of pizza sauce
- any toppings you desire
First, preset the oven to 425 F. Next, in a bowl add your yeast, sugar, and water. Set that aside for about 5 minutes (yeast will start to foam up). In your mixing bowl add the flour, salt, and oil. Once the yeast is proofed, add that to your mixing bowl. Then, mix everything well. Once done, set your bowl off to the side and cover it with a warm wet towel. That will allow it to rise more. Let sit for 1 hour.
Once your dough is ready, dust the counter with flour and kneed it into your pizza. Divide your pizza into 2 separate pizzas. Another option is to divide it into as many pieces as you have family members. Each person can make their OWN pizza.
Last, Roll out your dough and place it on a greased pan. Add your sauce, cheese, and toppings. Cook for about 10-15 minutes. Enjoy!
