This Ground Beef Veggie Soup recipe is a minimal easy prep soup. Perfect for those nights you forgot to plan ahead for dinner. If you cook it in the Instant Pot, you can even cook this recipe with raw ground beef. This is a healthy, low fat recipe perfect for anyone.
- 2 LBs Ground Beef
- 1 15 oz can of diced tomatoes
- 1 15 oz can or frozen bag of corn
- 5 medium sized potatoes (cut into cubes)
- 2 cups cabbage

Cook the ground beef in a skillet or Instant Pot. Once cooked, drain the extra fat off it. Combine ground beef and all ingredients into your pot or Instant Pot.
