This is the best Pumpkin Bread recipe I have ever had. It is a favorite at our house. With 4 Celiacs in our house I know how hard it can be to find good tasting desserts. This recipe always a favorite for even non Celiacs. Easy to bake, yummy to eat. You will want to keep making more!
- 3 cups white sugar
- 4 eggs
- 2/3 cup water
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground allspice
- 3 1/2 cups gluten free flour mix or wheat flour
- 2 teaspoons salt
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1 (15 ounce) can pumpkin puree
- 1 cup chopped walnuts (optional)
- 1 cup raisins (optional)
- 1 cup vegetable oil
- 2 tsp xanthan gum
- 1 cup of chocolate chips (optional)
Preheat oven to 350 degrees F (175 degrees C). Grease three 7 x 3 inch loaf pans. Mix all the ingredients in a bowl. Stir in nuts and raisins. Divide batter into prepared pans. Bake for 1 hour. Cool on wire racks.
