What If I am Gluten Free And/Or Dairy Free?
This recipe is easy to modify. This recipe can be made gluten free and dairy free. With four Celiacs in our house I know how hard it can be to find good tasting desserts. Our oldest son used to be sensitive to eggs, too. I have personal experience making this diary free too. All you have to do make this recipe dairy free is replace the eggs with egg replacer. Easy peasy. Done!
Pumpkin Bread
Ingredients
- 3 cups white sugar
- 4 eggs
- 2/3 cup water
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground allspice
- 3 1/2 cups gluten free flour mix or wheat flour
- 2 teaspoons salt
- 3 Tbsp of Pumpkin Spice
- 1 (15 ounce) can pumpkin puree
- 1 cup vegetable oil
- 2 tsp xanthan gum (if making gluten free
- 1/4 cup of brown sugar
- 1 cup of chocolate chips (optional)
- 1 cup chopped walnuts (optional)
- 1 cup raisins (optional)
Directions
First, preheat oven to 350 degrees F (175 degrees C). Grease three 7 x 3 inch loaf pans. Mix all the ingredients in a bowl except brown sugar. Put the brown sugar off to the side. Stir in nuts and raisins (if desired). Second, divide batter into prepared pans. Last, the batter is in the pans, sprinkle brown sugar on the top. Bake for 1 hour. Cool on wire racks.
