We just got back from a wonderful much needed vacation to Camp Bethel in the Big Horn Mountains. Our church goes up every year for a family camp with friends and family. We had about 70 people this year join us at Camp Bethel. Camp Bethel is a favorite for residents of eastern Montana and Wyoming. I always run into people who have either gone to summer camp up there or some family camp during the winter. I personally love going up in the winter, because they have the best sledding. It is nestled at the top of the Big Horns right outside Dayton, WY. We enjoyed playing board games and fellowshiping with all the families there. We met some new families and formed new friendships.
Saturday, we went up to this huge hill for sledding. We probably sledded for 3 hrs and had such a blast. It is fun as a parent to be able to kick back and be a kid again. Luckily we had two families rent some snowmobiles to bring us up to the top of the hill!
We have 4 Celiacs in our family (my husband, and all three kids). We used to worry about what we are going to eat, but over the last 3 years we usually have brought our slow cooker and all our food. This year we brought our Instant Pot, and my husband made chili for dinner. It was awesome and simple! If you have food allergies in your family consider taking an Instant Pot with you on trips. I also like to bring our Cuisinart 5 in 1 Griddle and Panini Press. It is amazing for those breakfast and lunch needs. I love I can make pancakes and bacon for breakfast and grilled sandwiches for lunch. I want my children to fit in with the rest of the kids. I strive to make great food even away from home!
